As a reformed potato chip addict, I am happy to announce that I have finally found a
healthy, vegan snack that satisfies my need to feed better than Lays Potato Chips.
Now that’s saying something!
If you are wondering what this miracle munchy is, the answer is kale chips.
Kale chips? Are you kidding me?
There’s no way kale can be a tasty, satisfying snack.
With a name like kale chips, you might not expect much in the way of
flavor, right?
Well, that’s where you are wrong.
We all know that kale is a very nutritions superfood, so try this simple recipe for baked kale chips adapted from
a basic recipe at freecoconutrecipes.com, and elevate your snacking to a higher level.
Easy Baked Kale Chips
Servings: 2
Preparation Time: 25 minutes
Ingredients
8 loosely packed cups organic kale, torn into 1″ to 1½” pieces, tough stems removed
2 tablespoons organic virgin coconut oil, melted and still warm
3 tablespoons organic nutritional yeast
1/4 tsp Sea Salt, to taste
Directions
Preheat oven to 325F.
Rinse kale and dry thoroughly.
Place in a plastic container or large bowl.
Poor warm oil over kale.
Close container lid, and shake to coat (or alternatively, stir to coat in a bowl).
Spread out onto a large baking sheet.
Sprinkle with sea salt and nutritional yeast (careful, it doesn’t take much).
Bake for 20-22 minutes, until crispy.
Note: If you wish to make Raw Kale Chips, use a dehydrator instead of baking them
in the oven.
Spice Things Up a Bit
But, don’t stop with just the basics.
Why not spice things up a bit and get creative with your kale chips by adding other flavors?
Raid your kitchen and you’re to find a variety of foods and spices that will add
more zing to your chips, including:
*lemon juice
*white wine vinegar
*cumin
*chili powder
*red pepper flakes
*soy sauce
*agave nectar
*fresh garlic
*granulated garlic
*cayenne
*vegan cheeses
and more…
So, enjoy your homemade kale chips.
Skip the popcorn and take them to the movies.
Pack them in your picnic basket.
Add them to your lunchbox.
Go basic or go a little crazy!
But whatever you do…
Bet you can’t eat just one!

I made two small batches in a counter-top oven last night – first batch was garlic sea salt, second was Tony Chachere’s Cajun. YUM! I went to the market and got more kale today! Have you tried storing them? I put a few in a ziplock to bring to someone at work and the olive oil ‘rehydrated’ them so they weren’t crunchy anymore.. any ideas?

I am so glad to hear that you made two different, delicious batches of kale chips. I usually eat or share mine so fast, they don’t have time to rehydrate, but I am going to investigate that problem.
I have a feeling that the raw dehydrated kale chips stay crisp longer. But the baking method is just faster. Thank you so much for sharing your comments and experiences with us.
When I go to the movies, I often sneak in a bag of homemade kale chips to eat instead of popcorn. I love how easy your recipe is, and good to know how long to cook them for in the oven! I usually dehydrate my chips but the oven is a good option if I need them in a hurry.
I just discovered the awesomeness of kale chips recently. So good and easy to make. I find they do tend to get soft again if stored so they need to be eaten right away (which has not been a problem at all!).
