Drinking coconut water from a freshly picked coconut while on vacation in the Caribbean is one
of my fondest memories.
Fast-forward to New York City…
Sadly, there are no coconut palm trees in this city, but I was delighted to have some healthy and
delicious freshly-blended coconut meat and water from the young coconut I bought at my local
natural food store–so that was the inspiration for my morning smoothie.
Like many of us, smoothies have become my go-to source for quick and easy nutrition.
I scour the kitchen to see what’s available and create a creamy, nutritious energy booster
I had some fresh, juicy organic blueberries on hand so plop they went into my Vita-Mix along
with the blended coconut meat and water.
Next, I added some organic peanut butter, a banana and an orange–then fortified my liquid meal
with a large scoop of RAW Protein Powder.
I switched on the Vita-Mix and let it do it’s magic, and within two minutes this nutritious, creamy,
blue-ish delight was ready to drink.

Coconut Blueberry Banana Protein Smoothie
Makes 2 servings
Coconut meat and water from one fresh young coconut
1 cup organic blueberries
1 tablespoon organic peanut butter
1 scoop Protein Powder of your choice
Add all of the ingredients to your high speed blender and blend until smooth.
Pour your smoothie into a glass or mason jar and enjoy.
Refrigerate extra smoothie in a sealed mason jar for later.
For best results, drink the balance on the same day.
