When I crave something creamy, yet healthy, I love to whip up a quick raw soup using
a variety of vegetables blended with avocado to provide a creamy consistency.
This light, savory and slightly spicy raw soup is perfect for lunch or dinner.
I like to serve it with a fresh, crispy salad and raw, dehydrated flax crackers.
The fresh, organic ingredients in this healthy whole food soup provide important nutrients,
vitamins and minerals, antioxidants, essential fatty acids and fiber.
And best of all, it’s ready to enjoy in minutes.
All you need is a high-speed blender and a dream!
Raw Tomato, Red Pepper & Avocado Soup
Makes 1-2 servings
Ingredients:
2 ripe organic tomatoes, chopped
1/2 organic red pepper, sliced
1/2 small onion, chopped
1/4 cup fresh organic basil leaves
1/2 ripe avocado
1/4 cup water
1/4 teaspoon sea salt
1/4 teaspoon turmeric
1 dash of cayenne pepper
1 tablespoon extra virgin olive oil
Directions:
Add the water, tomatoes, red pepper, basil, onion to the blender and blend
until smooth.
Add the olive oil and avocado and blend again.
Add the sea salt, turmeric, cayenne and blend.
Taste test and adjust seasoning as needed.
Pour soup into bowls.
Garnish with basil.
Sometimes I top my soup with other vegetables depending upon what I have
on hand or have a taste for, including:
*chopped scallions
*avocado cubes
* soaked sundried tomato bits
*chopped sweet red pepper
*chopped onion
*cilantro
I prefer to eat these fresh raw soups immediately after making them for
optimal taste and vitality.

The only raw soup I have ever tried is gazpacho. Cold soup seems a little weird to me, but your recipe looks delicious. I love the idea of eating all the healthy vegetables, herbs and the turmeric . And getting the full value nutrition without heating it away. I’m definitely giving this soup a try. I’m pinning it for later. Thanks
