Potatoes are one of my favorite comfort foods, that’s why I am always looking for interesting ways to prepare them.
These Roasted Zesty Lemon Potatoes are a perfect example of a delectable potato dish.
I also love cast iron cooking, so this vegan potato dish fits that bill as well.
Simply arrange the potatoes in a single layer in a large cast iron skillet.
Then sprinkle the potatoes with the garlic powder and season with salt and black pepper, to taste.
Next, whisk together the vegetable broth, olive oil, lemon juice, lemon zest and oregano in a medium bowl and pour over the potatoes.
Then roast and broil them to golden perfection.
