It’s apple season and apples are everywhere.

Apples taste good, but more importantly, they are very good for us.

That’s why they say “An apple a day, keeps the doctor away.”

Apples are provide disease-fighting antioxidants which help prevent and repair oxidation damage that happens during normal cell activity.

They are a good source of fiber and vitamin C and also contain polyphenols.

Apple pectin–a soluble, fermentable and viscous fiber–also provides a multitude of health benefits.

Apples also help to reduce cholestorol build up and help to protect you from heart disease.

 

For my family, apple season meant apple-picking excursions followed by weeks of making delicious apple dishes, drinks and desserts.

From making apple butter and apple sauce to apple cider, apple pies and apple cakes, our home smelled so yummy throughout the fall and winter.

My mother especially loved to make Apple Betty — a delightul bread, apple and raisin pudding.

This vegan Baked Maple Cinnamon Apple dessert takes me back to the smell and taste of my mother’s Apple Betty.

Best of all, it’s so easy to make with a couple of peeled and diced apples, blended with cinammon, maple syrup and almond flour.

 

 

Vegan Baked Maple Cinnamon Apples

Vegan Baked Maple Cinnamon Apples

Prep time: 10 minutes
Cook time: 25-30 minutes
Serves: 4

Vegan Baked Maple Cinnamon Apples

Ingredients:

3 T. coconut oil, melted (plus extra for greasing)
2 large apples, peeled and diced
2 t. ground cinnamon
3 T. pure maple syrup, divided
3/4 c. almond flour

Vegan Baked Maple Cinnamon ApplesDirections:

Preheat oven to 350°F and lightly grease a small baking dish with a little coconut oil.

Set aside.

Toss the apples with the cinnamon and a tablespoon of maple syrup and pour into the prepared baking dish.

Spread apple mixture into an even layer and set aside.

In a small bowl, combine the almond flour, melted coconut oil, and remaining maple syrup.

Stir to combine thoroughly, then evenly spread the mixture over the cinnamon apples.

Vegan Baked Maple Cinnamon Apples

Place in the pre-heated oven and bake until the topping is golden brown and the apples are tender, approximately 25 – 30 minutes.

Remove from oven and cool for a couple minutes before serving.
