Baby potatoes have always been one of my favorite, go-to comfort foods.
The potatoes used for this recipe are Honey Gold baby potatoes.
If you can’t find them in your local grocery store, you can substitute other varieties, such as red or finger potatoes.
If using larger potatoes, cut into bite-sized pieces rather than in half.
Potatoes are filling, delicious and a rich in vitamins, minerals and antioxidants.
The skin of the potatoes contains a great amount of the vitamins and minerals.
Studies have linked potatoes and their nutrients to a variety of impressive health benefits, including improved
blood sugar control, reduced heart disease risk and higher immunity.
They may also improve digestive health and combat signs of aging.
