1. The Fluffiest Vegan Pancakes Ever
These pancakes are not just tasty they are also free of any gluten and oil. Also, contrary to other vegan pancakes no bananas are included in the recipe. Better yet, this is an easy blender recipe that will not take any time at all. What you’ll need for the recipe is:
- 1/2 cup unsweetened applesauce
- 1 1/4 cup oat flour (rolled oats ground in a blender)
- 1/2 cup non-dairy milk
- 2 tsps. lemon juice
- 2 tbsps. maple syrup
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 tsp. vanilla extract
All you need to do is blend the ingredients in the blender (be careful of over-blending them). Then, using a non-stick pan on medium heat, add 1/3 cup of batter and cook for 2-3 minutes on each side. The last step is to stack as many as you would want on a plate and add fruit to make it even more delicious.
A quinoa bowl is a great dish that will be tasty as well as nutritious and filling. This recipe has more ingredients than the first, but is well worth it when you eat it.
For this recipe you’ll need:
- 100g extra firm tofu, crumbled
- ½ cup chopped broccolini or broccoli
- ¼ cup cherry tomatoes, halved
- ¼ cup mushrooms, sliced
- 1 cup kale, torn into pieces
- ½ cup carrot, grated
- ½ teaspoon yellow curry powder
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon paprika
- ¼ teaspoon salt
- ⅛ teaspoon pepper
- 1 lime, halved
- ½ cup cooked quinoa
- ¼ avocado, sliced
- ¼ cup deli sprouts or micro-greens
Heat a wok or saucepan on medium to high heat and while it does so mix together the spices in a bowl. Add the carrots, broccoli and mushrooms to the pan and cook for 3-4 minutes or until tender (add splashes of water). Lower the heat to medium and add kale and tomatoes and cook until kale wilts (add more splashes of water). Squeeze in half a lime, then add the crumbled tofu and keep on heat until slightly browned or thoroughly heated. Move this mixture over to a bowl full of quinoa and finally garnish with avocado and another squeeze of lime.
3.Flourless Pumpkin Muffins
These flourless Pumpkin muffins which as their name says have no flour included is also free of refined sugar. They are both vegan and gluten free as well as a perfect fall treat. For this recipe you will be needing only 7 ingredients:
- 1 1/2 cup gluten free rolled oats
- 1/2 cup pumpkin
- 1/4 cup maple syrup
- 1 tsp cinnamon
- 1/4 tsp ginger
- 1/4 tsp nutmeg
- 1/3 cup cranberries, raisins or pecans
First, you’re going to need to preheat your oven to 350 degrees. Mix all ingredients except cranberries in a food processor. After thorough mixing, add the cranberries and pulse a few more times until well incorporated. Scoop mixture into lined muffin tins and bake for 10 minutes to get a healthy yet mouth-watering treat.
